I have found that some AVI's have great quality but the sound is so low. Is there any software that can adjust this without too many problems?? Got Hellraiser 7 recently and you can hardly hear it.

If your watching on your pc, you can normally check the "Auto gain" option under the audio filter. This is normally the case/needed for ac3 only.
For example ffdshow has autogain, use media player classic (MPC) to get to the filter option easily.
